First, prepare two 9" pie pans:
- Graham crackers (36 squares, crushed or ground in chopper)
- 2/3 cup sugar
- 1/2 pound butter or margarine
- 2 tsp cinnamon
Mix the above ingredients
Line pans with this mixture, but save 1 cup for the topping.
Second, prepare gelatin:
- Pour 1/2 cup cold water in bowl and sprinkle 2 Tbls gelatin on top
Then, prepare the custard in a large mixing bowl:
- Beat 2 egg yolks slightly
- Add 1 cup sugar, 1/2 tsp salt, 1/2 cup milk
- Cook over boiling water (use a double-boiler) until like custard
- Add gelatin to hot custard mixture, stir until dissolved
- Cool until mixture thickens
- Add 1 lb dry cottage cheese and 1/2 tsp vanilla
- Beat with egg beater until light and fluffy
- Whip 1/2 pt heavy whipping cream until thick and pour into custard
- Beat 2 egg whites until dry and fold into custard mixture
- Pour into prepared crusts and sprinkle crumbs on top
