Ede's White Christmas Pie

Ingredients

  • 1 cup sugar

  • 1/4 cup flour

  • 1 envelope Knox gelatin

  • 1/2 tsp salt

  • 1/4 tsp cream of tarter

  • 1 cup coconut
  • 1 3/4 cups milk

  • 3/4 tsp vanilla extract

  • 1/4 tsp almond extract

  • 3 egg whites

  • 1/2 cup whipping cream

  • 1 - 9" baked pie crust

Assemble these ingredients, and then...

  • Blend 1/2 cup sugar, flour, gelatin and salt thoroughly in sauce pan.

  • Gradually stir in milk.

  • Cook over medium heat until mixture boils, stirring constantly.

  • Boil 1 minute.

  • Place in cold water to cool until mixture mounds slightly when dropped from spoon.

  • Blend in flavorings.

  • Carefully fold into meringue made of egg whites, cream of tarter and 1/2 cup sugar.

  • Gently fold in whipped cream, then fold in coconut. 

  • Pile into cooled baked pie shell.

  • Sprinkle additional coconut on top.

  • Chill several hours.

 

Serve cold.  Delicious topped with crushed berries.
