Rhubarb Rumble
1 cup flour
1 cup brown sugar
1/2 cup melted butter
1/4 cup oatmeal
1 tsp cinnamon
4 cup diced rhubarb
1 cup sugar
2 tbsp cornstarch
1 cup water
1 tsp vanilla
Mix flour, brown sugar, butter, oatmeal and cinnamon.
Press half of mixture into a greased baking pan.
If desired, reserve half of mixture for topping.
Cover with rhubarb.
Cook sugar, cornstarch, water and vanilla.
Pour over rhubarb.
Top with remaining crumbs.
Bake 1 hour at 350 to 375 degrees.
Serve warm, topped with whipped cream or ice cream, if desired.
Yield: 9-12 servings.
