Lisa Wilson's Zucchini Bread

bullet3 eggs, well beaten
bullet1 cup cooking oil
bullet2 cups sugar
bullet2 cups grated zucchini
bullet2 tablespoons vanilla extract
bullet3 cups all-purpose flour
bullet1 teaspoon baking soda
bullet1/4 teaspoon baking powder
bullet4 teaspoons cinnamon
bullet1 teaspoon salt
Add oil, sugar, zucchini, and vanilla to beaten eggs.
Sift dry ingredients together and add to oil mixture.
Pour into greased loaf pans.
Bake at 325 F for one hour,or until a knife comes out clean.
You can add any confectioners sugar icing that you make, if desired.
